Abstract
In today's world there has been a great interest in wines, even traveling and learning about its production, since they have a great variety of aromas and flavors, one of the best known being red wine; However, ignorance about the different processes and elaborations can be noticed, but especially in the marination of these wines, which can affect the service and customer satisfaction. In the present work, a bibliographic research was carried out to have a clear definition of some key concepts, in addition to explaining and identifying the different strains, describing their characteristics and recommendations.

En el mundo actual se ha visto un gran interés por los vinos, incluso a viajar y aprender sobre la elaboración del mismo, ya que cuentan con una gran variedad de aromas y sabores, siendo uno de los más conocidos el vino tinto; sin embargo, se puede notar el desconocimiento sobre los diferentes procesos y elaboraciones, pero sobre todo en el maridaje de estos vinos, lo cual puede afectar en el servicio y satisfacción de los clientes. En el presente trabajo se realizó una investigación de tipo bibliográfica para tener una definición clara de algunos conceptos claves, además de explicar e identificar las diferentes cepas, describiendo sus características y recomendaciones.
