Abstract
La presente investigación tuvo como objetivo la obtención de colorante natural a partir de la pulpa de arazá (Eugenia stipitata), es una fruta de color amarrillo rica en carotenoides, los cuales son los responsables de otorgar la coloración amarilla a la fruta (Narváez, 2008). Se utilizaron dos tipos de solventes orgánicos como el hexano y etanol, mediante concentración en el rota vapor a presiones de vacío a una temperatura de 45° C, Se determinó que esta fruta posee un 5,41 de Solidos solubles (°BRIX), y un 3,71 % de compuestos carotenoides, los cuales son los responsables de otorgarle la coloración amarilla al arazá Eugenia stipitata
Description
This research aims at obtaining natural dye from arazá pulp (Eugenia stipitata), which is a fruit of the Yellow color, rich in carotenoids, which are responsible for granting the yellow coloration to the fruit (Narváez, 2008). The methodology for obtaining the dye from arazá pulp involves using two types of organic solvents such as hexane and ethanol and by concentration on the rotary evaporator at pressures of vacuum at a temperature of 45 ° C, the use of This method ensures that there is no possibility of degrading the dye molecules by the effect of temperature during extraction. The results of the physicochemical characterization of arazá, it was determined that this fruit has a 5.41 Soluble Solids (° Brix) and 3.71% carotenoid compounds, which are responsible for granting the yellow coloration to arazá (Eugenia stipitata) Mejía, Narvaez, & Restrepo, 2006.
