dc.descriptionEn el presente trabajo que tiene como título, elaboración de 100 kg de mortadela especial, bajo NTE INEN 1338/2012, en el mismo se realizó una revisión bibliográfica con el fin de incluir las normativas que rigen a la elaboración de dicho derivado cárnico, identificando las cantidades permitidas en cuanto a conservantes y aditivos para la obtención de un producto apto al consumidor, por lo cual se planteó como objetivos; diseñar el diagrama de flujo de proceso, que permitirá orientar de manera concisa cada una de las etapas a realizar, también se realiza la descripción de cada una de dichas etapas del diagrama, por lo cual se analizó todos los factores involucrados, además se calculó los pesos requeridos de los ingredientes y aditivos que permiten la elaboración de 100 kg de mortadela especial y se realizó un análisis teórico de los peligros: físicos, químicos y biológicos que se presentan durante el proceso de elaboración de mortadela especial.es_ES
dc.description.abstractIn the present work that has as title, elaboration of 100 kg of special mortadella, under NTE INEN 1338/2012, in the same a bibliographic review was carried out in order to include the regulations that govern the elaboration of said meat derivative, identifying the permitted quantities in terms of preservatives and additives for obtaining a product suitable to the consumer, for which it was raised as objectives; design the process flow diagram, which will allow to guide in a concise way each of the stages to be carried out, also the description of each of these stages of the diagram is made, for which all the factors involved were analyzed, in addition the required weights of the ingredients and additives that allow the elaboration of 100 kg of special mortadella were calculated and a theoretical analysis of the physical, chemical and biological dangers that arise during the process of elaboration of special mortadella was carried out.es_ES
