Abstract

In Ecuador, sugar production is carried out by the sugar mills: Coazúcar, San Carlos, Valdez, Isabel María, Miguel Ángel, and San Juan, which are located in the Costa region and the Monterrey and North mills located in the Sierra region of which the first three are those of greater production in the country. The purpose of the sugar mills of Ecuador is to produce quality sugar, for that several processes are carried out that range from the cultivation and harvest of the cane, as well as the reception and preparation of it, milling, purification, evaporation, crystallization, centrifugation Drying and packaging For this, the control of parameters such as temperature, pressure, etc. is carried out. Complying with the established quality standards, (TABLE 9. ANNEXES) Ecuador's sugar industry had a total production of 572,588 MT of sugar in 2018, an agricultural activity that represents 8.7% of the national GDP.
