Abstract

The present practical work was carried out the measurement of the physical density constant in 4 milk brands applying the NTN INEN 0011 standard determination of the relative density of the milk applying the lactodensimeter method. The density reference values were obtained from the standard NTE INEN 0701 long-life milk UTH being 1,029 and 1,032 g / cc at 15 ° C, for bulk milk the standard NTE INEN 0010 was used where the density value at 15 ºC is 1,029 and 1,033 g / cc, milk density is not a constant value can vary with respect to temperature, at lower temperatures higher density and if the density is below the established has been adulterated with water. The experimental part was carried out in the Laboratory of Bromatology of the Academic Unit of Chemical Sciences and Health of the Technical University of Machala where the 4 samples were analyzed and the Nutrileche, Rey Leche and Toni brands, if they met the density established in the norm, the milk sample in bulk showed a value of 1.0246 g / cc, this result is below the norm, which indicates that it is adulterated
