dc.descriptionIn this investigation a protein hydrolyzate of aequidens rivulatus (blue old) using proteolytic enzymes (GRANOZYME ACC), in which an experimental design of six treatments with 12 replicates was applied was obtained where treatments A (1ml), C ( 2ml) and E (3 ml) conducted at a temperature of 28 o C for 24 hours, they were not hydrolyzed, and the enzyme catalyzed not the substrate at this temperature. While the remaining treatments B (1 ml), D (2 mL) and F (3ml) conducted at a temperature of 55 ° C for 24 hours when hydrolyzed reaching treatment D higher significant concentration with 90.3% followed by F with 88.9% and 85.5% only I reach treatment B with a kinematic viscosity of 0.15 mm2 / s. also it obtained a 24% protein, 73% humidity, with 2% fat and 1% ash as physical and chemical analyzes. According to this characterization of the raw material protein percentage of fish old blue it reached 20%, with 76% moisture, 3% fat and 2% ash this was made to facilitate the hydrolyzate by applying protease enzymes comparison of the raw material and the protein hydrolyzate obtained.es_ES
dc.description.abstractEn esta investigación se obtuvo un hidrolizado de proteína de aequidens rivulatus (vieja azul), utilizando enzimas proteolíticas (GRANOZYME ACC), en la que se aplicó un diseño experimental de 6 tratamientos con 12 réplicas donde los tratamientos A (1 ml), C (2 ml) y E (3 ml) realizados a una temperatura de 28 o C durante 24 horas, no se hidrolizaron, ya que la enzima no catalizo al sustrato a esta temperatura. Mientras que los tratamientos restantes B (1 ml), D (2 ml) y F (3 ml) realizados a una temperatura de 55 o C durante 24 horas si se hidrolizaron alcanzando el tratamiento D mayor concentración significativa con un 90.3 % seguido del F con un 88,9 % y tan solo 85,5 % alcanzo el tratamiento B con una viscosidad cinemática de 0,15 mm2 /s. También se obtuvo un 24 % de proteína, con un 73 % humedad, con el 2 % de grasa y el 1 % de ceniza según los análisis fisicoquímicos realizados. Según la caracterización realizada de la materia prima el porcentaje proteico del pescado de vieja azul alcanzó un 20 %, con el 76 % humedad, el 3 % de grasa y el 2 % de ceniza esto se lo realizó para facilitar el hidrolizado mediante la aplicación de enzimas proteasas su comparación de la materia prima y el hidrolizado proteica obtenida.es_ES
