dc.descriptionOne of the problems in the fish conservation is given due to the speed of degradation of the fats that is higher than that of other types of meats. Inside the fish muscle the lipids, the fatty acids and their components are very unstable, reason for which they are very susceptible to the oxidation. For such a reason it becomes necessary to avoid that the lipids, suffer the rancid phenomenons, this is achieved by means of the adiction of agent’s antioxidants, as the Ascorbic Acid. The present investigation one carries out in the Laboratory of Technology and Prosecution of Aquatic Organisms of the University of Machala, in the one which the Ascorbic Acid you use as antioxidante to avoid the rancid of the muscle of having fished Mugil curema to concentrations of 25%, 50% and 75%. For they thought about it the following objectives. To determine the action of the Ascorbic Acid used as antioxidant in the muscle of having fished Mugil curema. To establish the ranges of good concentration of solutions of Acid Ascorbic employees as antioxidants of fatty of fish. The results that they were obtained they showed that the concentrations of Ascorbic Acid to 75% turned out to be better as antioxidant in front of the other treatments.es_ES
dc.description.abstractUno de los problemas en la conservación de pescado, se da debido a la velocidad de degradación de las grasas, que es más elevada que la de otros tipos de carnes. Dentro del músculo de pescado los lípidos, los ácidos grasos y sus componentes son muy inestables, razón por la cual son muy susceptibles a la oxidación. Por tal motivo se hace necesario evitar que los lípidos, sufran los fenómenos de rancidez, esto se logra mediante la adicción de agentes antioxidantes, como el Ácido Ascórbico. La presente investigación se realizo en el Laboratorio de Tecnología y Procesamiento de Organismos Acuáticos de la Universidad de Machala, en la cual el Ácido Ascórbico se uso como antioxidante para evitar la rancidez del músculo de pescado Mugil curema a concentraciones del 25%, 50% y 75%. Para ello se plantearon los siguientes objetivos. Determinar la acción del Ácido Ascórbico usado como antioxidante en el músculo de pescado Mugil curema. Establecer los rangos de concentración optima de soluciones de Ácido Ascórbico empleados como antioxidantes de grasas de pescado. Los resultados que se obtuvieron mostraron que las concentraciones de Ácido Ascórbico al 75% resultaron ser mejores como antioxidante frente a los otros tratamientos.es_ES
