dc.descriptionCacao (Theobroma cacao L.) is one of the most important items in the country's economy, generating income and employment directly and indirectly to many families in several provinces. Ecuador, due to its geographical features due to its exuberant natural richness, produces the best fine aroma cocoa in the world due to its organoleptic characteristics. In the last years these characteristics have been lost by the mismanagement post-harvest, the replacement of varieties with greater resistance to diseases, greater yield, but criticized by their low organoleptic quality; Another one of the biggest problems is that at the time of harvest we do not determine the degree of precise maturity. This research was carried out in the Granja Santa Inés of the Technical University of Machala with cacao National type, coming from the same one. The main objective was to determine the degree of optimum maturity at the time of harvest in national cocoa. We distinguish visual degrees of maturity (5 degrees), then harvested for different grades 100 healthy cobs, the same day we proceeded to bankruptcy with a wooden mallet and were manually shredded. Then they go through the fermentation process using the wooden rotor for a period of 3 days, with a frequency of removal every 24 hours. For the drying the almonds were placed on shelves of plastic meshes for 7 days under cover and exposed to the air currents, until reaching 7 and 8% of humidity. Six treatments were evaluated: Grade 0 (T1), grade 1 (T2), grade 2 (T3), grade 3 (T4), grade 4 (T5), grade 5 (T6). We worked with a completely random design with three replicates. The data were analyzed in the SPSS version 23 program, using one-way ANOVA and the Tukey test at 0.05% probability. The physical quality tests such as: ear index, grain index, percentage of testa, percentage of humidity and percentage of fermentation (test of cut), were realized in the Laboratory of Genetics of the Academic Unit of Agricultural Sciences. While the sensorial analyzes were performed in the Laboratory of Quality of Cocoa and Coffee of the Experimental Station Pichilingue - INIAP, by experienced scavengers. The results showed significant differences in each variable analyzed. The highest percentage of total fermentation was obtained in grade 5 (T6) with 93.66%. The lowest percentage was obtained by grade 0 (T1) with 34.00%. The best sensorial profile was the degree of maturity 4 and 5 (T5 and T6), with high scores on specific flavors (cocoa, floral, Fruity, walnut and caramel) and low scores on the astringent and bitter taste, while the other treatments presented a similar sensorial profile, being affected by the pronounced presence of bitter and astringent taste. It is concluded that the degree of maturity (T6) is the optimum at the time of harvesting because it affects the degree of fermentation considerably, the other grades (1,2,3,4) negatively affect the physical and sensorial quality.es_ES
dc.description.abstractEn la actualidad el cacao (Theobroma cacao L.) es uno de los rubros más importantes en la economía del país generando ingresos y empleo de manera directa e indirecta a muchas familias de varias provincias. El Ecuador por sus características geográficas por su exuberante riqueza natural, produce el mejor cacao fino y de aroma del mundo. En los últimos años estas características se han perdido por el mal manejo post cosecha, el reemplazo de variedades con mayor resistencia a enfermedades, mayor rendimiento, pero criticados por su calidad; otro de los mayores problemas se debe a que en la cosecha no determinemos el grado de madurez óptimo. Esta investigación se realizó en la Granja Santa Inés de la Universidad Técnica de Machala con cacao tipo Nacional, procedente del mismo. El objetivo principal fue determinar el grado de madurez óptimo al momento de la cosecha en cacao nacional. Distinguimos de manera visual los grados de madurez (5 grados), luego se cosecharon para distintos grados 100 mazorcas sanas, el mismo día se procedió a realizar la quiebra con un mazo de madera y fueron desgranadas manualmente. Luego pasan al proceso fermentativo utilizando el rotor de madera por un lapso de 3 días, con una frecuencia de remoción cada 24 horas. Para el secado se colocaron las almendras sobre marquesinas de mallas plásticas por 7 días bajo cubierta y expuestas a las corrientes de aire, hasta alcanzar el 7 y 8 % de humedad. Se evaluaron 6 tratamientos: Grado 0 (T1), grado 1 (T2), grado 2 (T3), grado 3 (T4), grado 4 (T5), grado 5 (T6). Se trabajó con un diseño completamente al azar con tres repeticiones. Los datos se analizaron en el programa SPSS versión 23, mediante ANOVA de una vía y la prueba de Tukey al 0,05 % de probabilidad. Las pruebas físicas de calidad tales como: índice de mazorca, índice de grano, porcentaje de testa, porcentaje de humedad y porcentaje de fermentación (prueba de corte), se realizaron en el Laboratorio de Genética de la Unidad Académica de Ciencias Agropecuarias. Mientras que los análisis sensoriales se realizaron en el Laboratorio de Calidad de Cacao y Café de la Estación Experimental Pichilingue – INIAP, por experimentados catadores. Los resultados demostraron diferencias significativas en cada variable analizada. El mayor porcentaje de fermentación total se obtuvo en el grado 5 (T6) con un 93,66 %. El menor porcentaje lo obtuvo el grado 0 (T1) con un 34,00 %, El mejor perfil sensorial lo presento el grado de madurez 4 y 5 (T5 y T6,), con calificaciones altas en los sabores específicos (cacao, floral, frutal, nuez y caramelo) y calificaciones bajas en el sabor astringente y amargo, mientras que los demás tratamientos presentaron un perfil sensorial similar, mostrándose afectadas por la presencia pronunciada del sabor amargo y astringente. Se concluye que el grado 5 de madurez (T6) es el óptimo al momento de cosechar porque incide considerablemente en el grado de fermentación, los demás grados (1,2,3,4) inciden de manera negativa en la calidad física y sensorial.es_ES
